Kanyakumari - Famous Food Recipe - AVIAL... Part-1

Avial, a side dish made with different type of vegetables and coconut is not only tasty but also a nutritious vegetarian sidedish and is eaten with steam-cooked rice or adai.

This vegetarian food Avial is a side dish eaten with steam-cooked rice is a common food in especially Kanyakumari district, Tamil Nadu and Kerala. It is easy to make and is very nutritious as it is made of different types of vegetables, and coconut which contains omega-3 fatty acids.

This specific avial recipe is a speciality of kanyakumari district, which borders the Indian subcontinent down south.

The Ingredients

The kanyakumari avial recipe

Vegetables needed:
Green plantain(raw) - 1
Brinjal - 3
Carrot (small sized) - 1
Cucumber - 1 fist-sized piece
Elephant Foot Yam (senai/karunai kizhangu) - 1 big fist -sized piece
Mango - 1
Snake gourd - 1 fist-sized piece
Big onion - 1
Small onions - 6

Other ingredients:

Grated coconut - 2 full cups
Cumin seeds - ½ Teaspoon
Garlic cloves - 2
Green chilly - 2
Turmeric powder - ¼ tsp
Mustard seeds - 1 Tsp
Coconut oil - 2 Tablespoons
Curry leaves, salt to taste.

Preparation method

The kanyakumari Avial Recipe

1. Cut the vegetables into 2 inch long pieces.
2. Pour oil in pan, when hot, add mustard seeds.
3. After mustard seeds crackle, add curry leaves and sauté.
4. Add onions, sauté till it is slightly transparent, then add plantain, brinjal (egg plant), snake guard and sauté slightly.
5. Now add the other veggies, pour some water, mix in the turmeric powder, salt and allow it to cook on high flame. Stir it occasionally.
6. Now grind the grated coconut, green chillies, cumin seeds, garlic cloves to a very coarse consistency.(a swing or two of the mixer will do).
7. When the veggies are cooked, add the ground mixture, mix it well, cook for 45 seconds, and turn off stove.

Delicious avial is now ready to serve.

Tips For Perfect Taste


1. When adding water to the veggies, be careful not to add too much, because then you would have to wait till the water level to subside which spoils the taste.

2. Do not overcook the veggies. Do not cook after adding the coconut mixture for more than one minute.

3. Be careful so you do not grind the coconut mixture too much, just a swing or two will do.

4. Use coconut oil.Do not compromise.

5. Use Fresh veggies.

6. After switching the stove off, add some curd and mix it well after letting the product to cool for 10 minutes.
